Breakfast: Fried Over Hard Egg

I don't know about you, but I am really enjoying this downtime. Even though I work in psychiatry and had to go into overdrive, at the onset of COVID-19, my real work will begin, once this nationwide lockdown ends. In the past 3 weeks, my team has experienced an increase of crisis calls, but due to the risk of being exposed to COVID, there has been a fear to present to any of my Emergency Departments, for a face to face mental health assessment with one of my clinicians.

On a regular basis, my schedule usually goes from Sunday to Sunday, oftentimes, 24/7. The only time I have had downtime, is when I have taken a vacation, out of the country, where I keep my phone turned completely off. So please understand, when I say that I am personally enjoying this time, to recharge and practice self-care.

Apart of self-care, for me, is ensuring I eat 3-5 times a day. Working 24/7 hasn't regularly afforded me this opportunity, especially on mornings when I may have been managing a crisis at 3a and then must lead an 8a meeting. My breakfast generally consists of a green smoothie, oatmeal or a boiled egg and sadly, some mornings, nothing at all. Over the past 3.5 years, my meal prepping has dwindled, but this downtime time has allowed me to refocus and get back on track!

During this downtime, I have been making variations of fried over hard egg recipes every morning and my energy levels have sustained until about 11a, when I drink my green smoothie. Fried over hard eggs are quite simple and you can eat them with toppings or none at all.

One reason I feel I could never go full on vegan, is because of my love for eggs. I make egg omelettes, egg frittatas, scrambled eggs, egg muffins, boiled eggs, over easy eggs...you get the point! I am an egg fanatic! 😜🍳
