Creamy Goodness Juice Recipe

I have not posted a juice recipe in a while, but don't think that I'm not in the kitchen juicing on a regular basis! The kitchen is where this therapist (me), gets her therapy.

Here's what you'll need to taste the creamy goodness that awaits you:
  • 1 fresh pineapple, sliced in half
  • 1 granny smith apple
  • 1 golden delicious apple
  • 1 nub of ginger
  • 1 lemon
  • blend these together + serve over ice!
This juice is really refreshing and a sweet treat to the taste buds! I hope you enjoy it!

Wellness Break: Oil Pulling/Hemp Oil Benefits

About a year or so ago, I set out on an attempt to begin oil pulling with coconut oil. That attempt did not last long at all. So I revisited it starting in November, but using hemp oil.

What is oil pulling, you might be asking yourself. Oil pulling is a method of oral cleansing, which originated from Ayurvedic medicine. I've discussed Ayurvedic medicine in a post a long while ago, but it's worth looking into. In a nutshell, oil pulling is swishing around a plant-based oil in your mouth/through your teeth for at least 10-20 minutes.

There are several noted benefits, though none are fully medically supported. Here's a list of just some of the benefits of oil pulling:
  • Oral health: combats bad breath, tooth decay, cavities and gum health
  • Skin: clears facial acne
  • Physical health: arthritis, migraines, diabetes, detoxification and asthma
Again, oil pulling is used mostly as a form of naturopathic medicine.

What's the best process for oil pulling? Here are some simple steps based upon my research and application: 
  1. Firstly, Oil pull first thing in the morning for 10-20 minutes, before you've even brushed your teeth. A major reason why I stopped doing this practice a year ago is because it took up too much time in the morning. So to avoid this excuse, I decided to do my oil pulling while I shower. So far so good! Be sure to spit out the oil in the toilet. Please note that the oil starts off pretty thick, but becomes more fluid after a few minutes.
  2. Secondly, gargle with a mouthwash to loosen up the oil.
  3. Thirdly, brush your teeth like normal.
Now onto my wonderful hemp oil! I chose hemp oil because, if you can't tell, I am obsessed with anything hemp! I've blogged about hemp in a few posts, please check them out here, here and here.

There are other well-noted oil options to pull from (no pun intended). Some of those options are: olive oil, coconut oil and sesame oil.

I really enjoy my daily attention to my oral health. So far, I have definitely noticed fresh breath and the color of my teeth have become even. I cannot note any other benefits as of yet, but I'll be sure to post an update after 3 or 6 months.

We are literally down to the final 30 days of 2014!! Woohoo! I'll spend some time reflecting this month on goals that were and were not accomplished. I really just want to take it easy, but I know that will not happen!

Gobble, Gobble! Whipped Sweet Potato Soufflé Recipe

Last year, I shared with you that one of my favorite holiday side dishes is sweet potato souffle. This year, I want to post the actual recipe, so you can enjoy it for yourselves! It's really simple to prepare, especially if you have any type of blender or food processor.

Here's what you'll need:
  • 4 sweet potatoes
  • 1/4 cup of unsweetened almond milk 
  • 1 bag of walnuts
  • 2 tbs of olive oil
  • 2 tbs of light brown sugar
  • 2 tbs of vanilla extract
  • 1 tsp of cinnamon
  • 1 tsp of nutmeg
  • 1 pinch of himalayan pink salt
Cooking instructions:
  • Heat your oven to 350 degrees.
  • Bring sweet potatoes and a pinch of salt to a boil. You want to be sure to cook the potatoes until you can poke it with a fork and it nearly breaks in half. Roughly 25 minutes.
  • Once softened, strain them, slightly cool and remove the skin.
  • After the skin is removed, place potatoes in a bowl to manually blend, in a blender or in your food processor.
  • Add and begin blending together the almond milk, olive oil, brown sugar, vanilla extract, cinnamon and nutmeg.
  • Now that it has reached a whipped/smooth consistency. Use oil to grease a pan. Then spread the whipped potatoes in your pan.
  • Crush up your walnuts and cover the top of your souffle. I've also used marshmallows in addition to walnuts.
  • Place in the oven to bake for 20 minutes.
  • Serve and enjoy!

Organic Greek Nonfat Coconut Kefir

Hi there! Remember my Creamy & Delicious Flax Milk post? Well, I promised to return with my other healthy milk alternatives and here walks mighty, yet powerful...Coconut Kefir! It took me a month or so to blog about this because I wanted to be sure that I could share the benefits and they ring true to me. So let's learn about Kefir and how it can play a major role in your digestive health, among other things!

What is Kefir? I honestly feel bad for answering, since I have not blogged about probiotics, but that is essentially what Kefir is - a modern day probiotic. :-) I thought it'd be easier and less painful for me to explain, so I found a mini definition on the world wide web: "Kefir is a fermented milk product...it is slightly sour and carbonated due to its fermentation...it is a potent probiotic, consisting of both bacterial and yeast species of beneficial flora and may help against gastrointestinal diseases." How was that?  Pretty easy? I personally chose coconut kefir because my body does not digest cows milk at all. If you are lactose and/or suffer from digestive disorders like myself, I would recommend the coconut version of Kefir. I instantly noticed a difference in my IBS pangs, which subsided after a short period of time.

So how can Kefir help you? I am completely amazed at how many healthy food options there are for people who suffer from a mental illness and Kefir is definitely one to place on that list! I read somewhere that Kefir has a "tranquilizing effect on the nervous system". It has been known to aid people with the following symptoms:
  • Depression - filled with tryptophan, which produces serotonin, which makes us all HAPPY!
  • ADHD
  • Sleep disorders/chronic fatigue syndrome
  • AIDS
  • IBS (irritable bowel syndrome)
  • Various cancers
  • Reduces food cravings
  • Digestive health, such as IBS. Adds friendly bacteria to your gut.

Collard Greens: Benefits and Vegan Recipe

I'm just a girl raised in the South and I love my collard greens!
Collard Facts: 

1/2 cup cooked collards =
  • as much fiber as 1 cup of brown rice
  • about at much calcium as 4oz Greek yogurt
  • high in vitamin a, c, k and folate (good for pregnant women)
  • low in calories, fat, sugars and sodium
Maybe you've always found cooking collards intimidating, well, I thought I'd provide you with a really simple recipe.

Here's what you'll need:
  • 1 tbs olive oil
  • green onions, chopped
  • 1 tsp red pepper flakes
  • 1 clove of garlic, chopped 
  • 1 pound collards, chopped
  • 3 cups veggie stock
  • 2 roma tomatoes, chopped 
  • Himalayan pink salt and pepper (to season)
Directions:
In a large pot over medium heat, heat oil. Saute onions until soft, add red pepper flakes, salt and pepper and garlic. Gently stir in collards for 1 minute. Add veggie stock, cover and bring to a simmer. Cook until greens are tender, which can be about 40-45 minutes. Once cooked, add fresh tomatoes to garnish.

Gluten-Free Coconut Flour

Remember my Quinoa Flour post? You can take a look at it here. Well guys, it is a favorite of mine. I have only made quinoa pancakes with it. My apologies, they weren't pretty, so I didn't post them. :-) I was not able to tell much difference in the flavor, but in the texture. Alternatives to all-purpose flours are popular with me because of the issues I experience with my digestive system.

Anywho, meet the newest addition: coconut flour. I purchased this 1 pound bag from TJX/HomeGoods for only $4.79. It is an "organic superfood" by Nutiva, which also makes a trusted coconut oil that I use. Here's what Nutiva has to say about their coconut flour.

The benefits of coconut flour are plenty, these are just a few:

Creamy & Delicious Flax Milk!

I am admittedly a creature of habit, especially when I find something that not only works, but that I like. Well recently, I decided to experiment with a variety of milks because I have been married to Almond Milk for a few years now. The first post is on Flax Milk, made with flaxseeds. First, I must say that I always read nutrition labels and I am leery of labels with a lot of ingredients. Being that I do not always make my nut milk myself, I do not battle the milk label gods. It must, however, be lactose, gluten and carrageenan free because of my Irritable Bowel Syndrome (IBS). As you can tell by the photo, the folks at Good Karma met my needs.

Here are some benefits of flaxseeds that I posted in the past. I've always recommended flaxseeds to clients who not only struggle with poor nutrition, but have depressive-like symptoms.

Now onto the taste...this is definitely creamy & delicious! I have fallen in love. Though, I don't plan to cheat on my beloved almond milk, I will most certainly make flax milk apart of my daily intake.

Flaxseed milk isn't so difficult to make. I will make an attempt at making my own in the near future. Have you ever had flax milk? Do share!

Mental Health Awareness Week: October 5-11, 2014

Did you know that one in four adults living in America experience a mental illness in a given year? That's right...look around you. If there are four or more people, one of them has, has battled or is currently undiagnosed with a mental illness. I think that's what makes me so sick is that we have created a stigma over something that is too common. But I shall not stand on my soapbox and rant on this post. I come to you with greetings and good cheer because I am bringing awareness to something so taboo. This week is Mental Health Awareness Week! I am a avid supporter of NAMI, which stands for National Alliance on Mental Illness. Here is a link from NAMI's website, so you can see how you can take action in the plight. I will be actively engaged in the community this week and may try my best to share mental health posts, as well.

Is it October already?!????? Is anyone else wondering where the year went? Ugh! It feels like a month or so ago when I keyed in my December 2013 blog on Setting Intentions. I have gotten through most of my list and others on the list, I had to take a step back from. It's no secret that I enjoy working, but I am attempting to learn how to have a "work/life" balance.

OCD & calories


I saw this image online and was completely in full agreement with the statement. It bothers me so much to see clients eating unhealthy, yet they count calories. Its such a conundrum. My suggestion is to not focus so much on caloric intake, but on preparing for and eating a balanced meal. Stay clear of the middle aisles at the grocery store, unless they are 100% of whatever it is that you are buying, with no added preservatives. Most do not realize how obsessive counting calories can be. If you stay clear of foods with long labels, you've won half the battle. Go local.

Hemp Happy!

Its been a while since I've posted a TJX store healthful foods haul. I will do a series of posts of items that I have recently picked up at my local store. 

However, today, I would like for you to meet my Hemp Hearts <3. During the day, I am not confined to working behind a desk. I am actually the director of a behavioral health outreach program at a psychiatric hospital and I spend roughly 90% of my time in the community, networking with mental health professionals. In having a position which requires me to have back to back appointments, I sometimes do not have the luxury of stopping for lunch. I instead, pack small foods to snack upon throughout the day. This week I have been all about these Hemp Hearts by Manitoba Harvest. Wellness Break: Chiropractic Care

For some time now, I had been meaning to see a Chiropractor for my digestive and irritable bowel (IBS) symptoms. So a few weeks ago, I decided to go and I had not one, but two spinal adjustments within a few days. Upon arrival to my initial appointment, I had some stomach pangs that were fairly constant and had been that entire morning. Shortly after my doctor adjusted me, I noticed a difference. I am clear that it was not just in my head, as I have been experiencing IBS since summer of 2012 and I am attuned with my body. Of course, I have to balance my diet with my wellness care by eating mostly gluten-free foods. Cutting out gluten and dairy has significantly lowered my IBS symptoms. Yoga also helps me to practice stillness, so that the muscles in my large intestine also relax.


Here are some benefits of having a chiropractor adjust your spine. As you can see, there are several areas relating to your mental health that improve by having an adjustment. As a holistic health practitioner, I advocate for at least a consultation. However, I also recommend that if you see a MD on a regular basis, that you consult with him/her first. If you are like me and are pretty aware of your well-being and you've done the research on problematic areas, find a reputable chiropractic physician in your area and seek them out. There are pros and cons to having a spinal adjustment, some cons can be life—threatening. Please do your due diligence by researching before having an adjustment.

FM's Flu Shot

Hello there! I feel so terrible because it appears that I have neglected my blog. To be honest, I can admit that I have a horrible work/life balance and work oftentimes consumes my schedule. I have taken on a few projects that have unfortunately taken precedence over blogging. Needless to say, I am back to share with you Food-Mood's version of a "flu shot".

Its no secret that I believe wholeheartedly in holistic health. I had gone 30+ years without ever receiving a flu shot and due to my working in a psychiatric hospital, I received my first one in 2012. A few days after getting that shot, I became seriously ill. I know, you are supposed to get the flu, while your body builds up "antibodies" - and while never having had a shot or the flu, I absolutely hated how I felt. The sickness lingered on for a couple of weeks and I vowed to never get a flu shot again.

In walks my idea of the flu shot, via my at home juicer...
Here's what you'll need:
  • 2 carrots
  • 4 garlic cloves
  • 1/2 lemon
  • 1 ginger numb
  • 1/2 tsp cayenne pepper
This recipe is good for one person. Be sure to get a head start on upcoming cold/flu season with natural healing. Your health is so important during this time of year!

Serotonin and Suicide

On the same note, I say it many times, but I am a Mental Health Counselor first. I am a first responder in the mental health community and I am deeply saddened when I know that someone has taken their own life because they see no end to their personal afflictions. Believe it or not, there are people such as myself who are here to serve, at any time of the day. If you know of anyone whom you have noticed a significant change in, maybe they have become withdrawn or happy one minute and sad the next - please reach out to them. The National Suicide Prevention Lifeline is a great resource to those who may be suffering with depressive symptoms. I have also included an image of suicide warning signs below.

20 Ways to Maintain Mental Health

Mental Health is still somewhat of a taboo topic. Unlike many terminal diseases, a person and their mental health is relatively unseen. I recognized long ago, when counseling my mentally ill clients, that they are no different than me. We ALL are affected by our own mental well-being.

As I am creating collateral pieces for a project, I thought to post 20 ways to maintain your personal mental health. Enjoy!

  1. Carry a journal to write your thoughts
  2. Balance your eating habits - 3 portioned meals per day
  3. Take nothing personally
  4. Have "me" time - take breaks
  5. Choose your words - especially your feeling words
  6. Listen to music
  7. Ask for feedback
  8. Be aware of your feelings - good and bad
  9. Surround yourself with supportive people
  10. Do no harm to self or others
  11. Ask for what you want
  12. Sleep 6 or more hours a day

Health Benefits of Spirulina

Thought I would pop in to share another great find from a local TJX store: Spirulina!

Spirulina is a form of blue-green algae that is born in the freshest warm water. The Aztecs often used spirulina because of it's nutrient-rich properties, which is why we know it today as a "super food".

Beet Queen Juice Recipe

I have been having fun creating a few juice recipes lately and I wanted to share one that involves beets, that has been cleansing out my liver.

What you'll need:
  • 3 carrots
  • 3 celery
  • 1 beet
  • 1 ginger nub
  • 1/2 lemon wedge
  • 1 tsp maca powder
  • 1/2 tsp turmeric (very little - you do not want it overpowering your taste buds)
  • Juice, serve over ice and enjoy! 
I love beets and carrots together because it adds a rich creamy texture.

I am happily welcoming the month of July and revisiting my intentions that I set at the end of 2013. Remember my post on "Setting Intentions"? I mentioned revisiting your journal at the end of the year, but it would also be a great idea to check the progress of your short-term goals, about mid year. 

If you have been putting off doing something, July is a good midpoint to get moving! Seasons are shifting and it's time to carpe diem!

Make Vegetable Pasta w/the Veggetti!

I have been meaning to post a blog about my new kitchen toy, but I have yet to actually use it. A month ago while at a WalMart store, I spotted this tool for only $15! I originally wanted to purchase the Paderno Spiralizer after tracing my stomach pangs to carbs, in particular those with gluten, but could not resist the size of this one and the price being half off (I'm a sucker for a deal!).

Being that I have not used it, I thought I would share a video showcasing how it works. Take a look here and if you're feeling up to it, let me know if you own either the Paderno Spiralizer or the Veggetti and how you like it!

Shrimp Pesto Pasta Recipe

I haven't posted a lunch/dinner recipe in quite some time, so I thought I'd share a recipe that I created.

Here's a simple recipe that only requires 8 ingredients:
  • Shrimp
  • Chopped Spinach
  • Sliced Cherry Tomatoes
  • Garlic & Herb Feta Cheese Crumbles
  • Whole Grain Pasta
  • 1 tbs Fresh Pesto
  • Seasonings: Garlic Salt and Himalayan Pink Salt
What you'll need: 1 pot to boil pasta, 1 skillet to saute shrimp and 1 bowl to toss everything together.

Instructions
  • Follow directions to boil pasta, add Pink Salt to water. Once finished, drain and set aside.
  • Saute shrimp, leaving the tail on. Add garlic salt and 1/2 tbs pesto. Set aside.
  • In your bowl, add freshly chopped spinach, sliced cherry tomatoes, garlic & herb feta cheese crumbles and the remaining 1/2  tbs pesto.
  • In that same bowl, proceed to toss in pasta and shrimp.
  • Serve and Enjoy!
Measure each ingredient based upon your personal preference. 

Note: I have made this same recipe, minus the cheese and shrimp, for a friend who is vegan and they loved it! 

Exciting News...


When I first started Food-Mood in 2012,  I realized that I found the full scope of my passion. I was able to successfully combine two of my personal missions...mental health awareness and nutrition. Food-Mood had been in business for almost a year when I knew that the ultimate goal was to expand my reach and the only way to accomplish this was to pursue my lifelong dream of being a founder of a nonprofit organization!

After laboring over the idea, filling out paperwork and patiently waiting for the government to reopen after a shutdown, I am happy to say that I have not only founded a nonprofit organization, but have been granted federal tax-exemption status!

Now onto the real work! 

I am so excited and cannot wait to share additional news with my Food-Mood readers. As with any nonprofit organization, community support/donations, etc. is always welcome. I like to get going before I ask for help, so please stay tuned! :-)

Forbidden Black Rice

Early this year my mother, who has the privilege of being a stay at home grandmother, was watching the Dr. Oz show and forwarded me information on Black Rice. I immediately drove to Whole Foods to pick some up! The great part about WF (not always "whole paycheck"), is that you can find items in dispensers and get only what you need and that is exactly what I did! 


Through my little research and personal taste test, I found that black rice is a superfood, likened acai or any other antioxidant rich food. Unlike white or brown rice, black rice helps your cells fight cancer causing free radicals. Now onto the taste, it is very light in flavor and was somewhat floral. The color did bleed a little and the texture was no different than any other rice grain.

The Power of Bentonite

For years, I have been an avid user of Aztec Secret Indian Healing Bentonite Clay Powder, mostly for my hair and skin, but I have come to love the liquid detox form by Yerba Prima.

I am always discussing the release of unwanted toxins, especially after my colon scare last year. We are constantly consumed with unwanted and yes, sometimes welcomed toxins (alcoholic beverages, smoke, etc.), so we must become conscious of ways to release them from our systems.

Bentonite is one of the most effective and powerful healing clays on the market. As stated above, you can use it internally, as well as externally. There are a variety of brands that you can purchase, though my personal faves are referenced above, with a click through to Vitacost. Bentonite basically creates an "electrical charge" when hydrated and attaches itself and absorbs any and all toxins. It is long known to remove not only toxins, but heavy metals and impurities.

For my face, I just mix the powder with equal parts of Apple Cider Vinegar, apply to my face as a mask and let harden. With my hair, the process is very detailed in which I include various oils that may not work for your hair type. I suggest that you conduct your own online search to learn the best way to use Bentonite. If you decide to purchase the liquid form, be aware that it does what it says its supposed to do and you will be fully cleansed! :-)

May is Mental Health Month!

Mental Health has always been my #1 priority. I am involved in a lot of community efforts to raise awareness and provide sufferers proper treatment.

Locally, I have teamed up with Mental Health of America to spread their initiative, "Mind Your Health". I received a pdf file and I wanted to share with you this calendar of things you can do every day during the month of May, to ensure you are paying extra attention to your mental well-being. 

I encourage you to print out the calendar, hang it up and be mindful of the daily task. I plan to journal each day and conduct a daily assessment on how I am feeling. 

Hopefully this blog has posted in enough time for you to avoid your daily coffee. *smile* If not, simply swap out day two for day 1.

Immune Boost Juice w/ Garlic!

I don't know about you, but when I get super busy and I forget to take time to nurture myself, my body lets me know! Last week was no different. A huge portion of my days are spent working with mental health patients and the mental health community (which can be extremely draining in of itself). The rest of my time, I am working with nutrition clients, my personal projects, exercising and maintaining personal relationships. It is a never ending story, that I absolutely love, but my body hates! Most days, I find it very difficult to shut down at night, yet I rise early.

Last week, after over 1 year of no sickness, I started with a sore throat that quickly escalated to a fever! In less than five days later, I am happy to say that my sickness (whatever it was!) is fading. There was a combination of things that I did, but the most important (aside from drinking a lot of water) was drinking my fruits and veggies via my juicer. Each day that I was sick, I did not eat meat and I had either 3 juices or a mixture of juices and green smoothies. My least favorite, but most potent was what I like to call "Immune Boost Juice", because it is filled with tons of ingredients that are known to be immunity boosters.

Here's what I used:
  • 2 carrots
  • 2 celery stalks
  • 1 WHOLE garlic clove (argh!!)
  • 1 pear
  • 1 knob of ginger
  • 1 lemon
  • 1/2 tbs of maca root (personal preference)
  • Pour over ice & drink really quickly
Had it not been for the garlic, I would have really loved this juice, but again, it was not my favorite juice recipe from last week (and I am a fan of garlic). Be sure to drink it quickly, so you don't confuse your taste buds.

Anywho, if you get sick, remember this recipe! I know you'll hate me for it, but thank me later. :-)

Cooking Tip: Parchment Paper

Happy Monday, folks! Please excuse my absence, when I am really busy in the community, I often neglect my social media outlets! Nonetheless, I thought I would hop on and share an easy cooking method with you, which is the use of parchment paper.

What I really enjoy about parchment paper is that it saves you from using cooking oils because whatever you are cooking, steams within the paper as you bake it in the oven. There is also absolutely no mess, you simply unwrap your steamed food and serve!

For me, I have prepared mostly fish (like the Swai fillets pictured) using the parchment. I have also steamed asparagus with various veggies, seasoned with fresh garlic and herbs.

You can find parchment paper at any grocery store, next to aluminum foil and saran wrap. Here's a YouTube video from the guys over at Food Wishes, with a thorough demonstration and additional information on where to find parchment paper.

Detoxifying Juice Recipe

It is not a secret that I enjoy discussing healthy colons and bowel movements, in fact, I am sure to make you cringe with how candid I am about the topic!

This time last year, I was gearing up to undergo my first colonoscopy and prior to my procedure, I had to drink 3 different solutions to completely cleanse my colon. Of course, if I had it my way, I would have chosen to flush my system out the "natural" way.

Soooo, really there's no easy way to tell you about my juice recipe, other than it is nutritious and detoxifying! If you are in need of a good cleansing, I guarantee you won't be disappointed with this mix!

Ingredients:
- 7 Celery Stalks
- 3 Cucumbers
- 2 Pears
- 1 Lemon
- 1 Ginger nub
- 1/2 tbs of Maca Root (you can exclude, if not on hand)
- After juicing the above ingredients, pour over ice and serve!

I typically will drink this first thing in the morning, especially if I am not in a rush to head out!

Wellness Break: Natural Products Part I

The path towards complete health and wellness can feel overwhelming to someone just starting out. Trust me, I know because I was a "product junkie", though I still love my lavish bath soaps, perfumes and body lotions. I did, however, decide to take small steps in the direction of becoming chemical free and that started with aluminum-free deodorant and fluoride-free toothpaste.

I wanted to take a Wellness Break in the middle of National Nutrition Month to share two natural, chemical-free products that I began using last year and am completely satisfied with!


Here are some health risks associated with using products that contain the following:

Aluminum: Seizures, Breast Cancer, Kidney Problems, Alzheimer's Disease and Bone Forming Disorders. (Read my blog post on why sweating is good!)

Fluoride: Tooth Decay, Certain Cancers, Thyroid Problems and Osteoporosis.

I encourage you to take responsibility for not just your nutrition, but your overall wellness and research reasons why and ways that you may begin eliminating chemicals from your daily use. As I mentioned, I am still attached to some personal items, but I am happy with the small changes that I have made! You must be willing to start somewhere.

Update: I purchased a couple of boxes of toothpaste from Wal-Mart and I did not check to see if they were all fluoride free. Unfortunately, since I did not pay close attention to my purchase, the photo above is of one that has fluoride in it. I discovered this after a week of sensing something wasn't quite right with my taste buds! So the overall message is: READ LABELS, folks! :-)

Fruit & Chia Pudding Recipe

I am not really big on Social Media, in fact, I am almost "anti-social media", but have adapted with the times (hence this blog). If I had to guess I would say that 99.9% of my Food-Mood business is received via referrals and presentations. One thing is for certain though, I have made it a point to "follow" companies or people that inspire me to be a better person in the kitchen! 

Today's blog post is in honor of the creators of Food Matters. If you are not familiar, I recommend watching the short documentary on nutrition, which can be found on Netflix. On Instagram last week, they posted a lovely Vanilla & Coconut Chia Pudding recipe that I had to experiment with!

See below my recipe that I tweaked, along with photos to match:

                                       
Ingredients: 1 cup of Almond Milk (I used Vanilla to go along with the theme), 1/4 cup of Blueberries, 1/4 cup of Raspberries, 2 tbs of Chia Seeds, 1 tbs of Shredded Coconut, 1/2 tbs of Vanilla and Mason Jars. If you prefer different fruit, feel free to substitute. Prior to this post, I used Mango and Pineapples. Yum!

Combine all of the ingridients into your mason jars.

Then seal & shake!

Place your jars in the refrigerator to thickened. The Food Matters recipe calls for 3 hours, but I found that having them settle overnight works best for me!

My weekends are pretty much spent at the grocery store and at any TJX store that I may find. I have traded the nightlife in for a more domestic life and I am quite fine with it! *smile*


Anywho, just wanted to stop by and share my goodies with you. I purchased these three 8oz bags of Chia Seeds, Turmeric Powder and Coconut Palm Sugar for a total of $18! At first, I used to be surprised at the low prices found at the TJX stores, but now I marvel in it. I can honestly say that some of my go-to stores are now in competition with TJX. Of course, it depends on what you are looking for, but they are sure to please.

Green Tea Water Flush

Many people ask me how I am able to drink so much water, especially if they know me personally and know that years ago I hated drinking plain water (read my blog post here). My response is always: "You have to be creative." Being that my weight requires me to drink 60+ ounces of water a day, I do not shortchange myself - I drink 60+ ounces a day!

If you are someone who struggles with drinking your daily intake of water, here is yet another way to maximize the opportunity to do so.

What you'll need:
  • Green Tea - I recommend using Green Tea because of its health benefits (Chinese and Indian medicine use green tea to improve mental health).
  • A glass jar that can be closed
  • Boiling water
Directions:
Place 1 tea bag in a glass jar and pour boiling water over it. Seal the jar and place in the refrigerator to seep. Once chilled, feel free to add ice. Repeat these steps throughout the day until you have reached your maximum water intake (prepare the jars in advance). If you find that the water is still too bland, add a 1/2 tbs of raw honey to it prior to placing it in the fridge. 

While in HomeGoods a few months back, I stumbled across this lovely mix of green tea with dandelion, milk thistle and violet. I had to purchase it and I am so happy that I did! As the seasons have been changing rapidly (freezing one day and 70 degrees the next), I have avoided getting sick and I owe it to my ability to remain hydrated.

Happy Liver Juice

What if I told you that your mental health and overall well-being is linked to your liver? Our organs are directly linked to how we feel and how we balance our emotions. In my research, I have learned that by treating depression, holistic practitioners in the field pay close attention to the elimination of toxins in the liver. A part of the liver’s function, as it relates to our mental state, has the ability to stabilize our emotions and prevent emotional inactivity. When our liver is full with toxins, they move throughout our bloodstream, which in turn affects our body’s natural flow. One of the roles that the liver is responsible for is the conversion of hormones released during high emotional states to elimination. When our high levels of emotions stay a little longer than they should, the liver stops functioning properly.

It is a healthy practice to tune into our body’s natural flow, so that we are not weighing them down with toxins. Having a healthy diet is one good way to restore the liver’s function, so that we can maintain a healthy emotional state.


One of the ways that I have balanced my liver, is by flushing my system out with my “Happy Liver Juice” recipe. Take a look at the ingredients below and the benefits as they can improve your liver function:

- 6 carrots (natural liver detoxifier and great for acne) 
- 2 roots of turmeric (stimulates elimination of bile in the liver and then works to strengthen the liver)
- 1 lemon (liver cleanser) 
- 1 ginger nub (stimulates better liver performance)
- 1 orange (liver cleansing enzymes) 
- ½ tbs of maca root (balances those crazy hormones)
- Pour over ice, drink & enjoy!

I recommend drinking this juice at least 1-2 times per week (to start). While you detox your liver, you begin to detox your entire body and may experience clearer skin, stronger nails, weight loss and a spike in your energy!

Benefits of Cacao

My favorite TJX stores strikes again! While perusing the specialty foods aisles at HomeGoods over the weekend, I scored a very affordable bag of cacao...not to be confused with cocoa. Cacao is actually cocoa, but in it's natural state, filled with nutrients that may provide natural energy.
Cacao has many health benefits, which include:
  • Mood enhancer - acts as an anti-depressant
  • Promotes heart health
  • Eases PMS symptoms
  • Reduces risk of colon cancer
  • Improves brain function
  • Enhances glucose metabolism
  • Aphrodisiac
  • Aids in weight loss
Here is a suggested recipe on the back of the bag:
- 12 oz almond milk
- 1 tbsp cacao powder
- 1 banana
- Ice, water & blend away!
*I added a 1/2 tbs of Maca powder and 1 tbs of hemp protein to mine.

Cacao offers an abundance of antioxidants, which exceed that of blueberries and cranberries.

Green Smoothie Recipe

My Nutribullet and I are still going strong! Since I have gotten my juicer, I have noticed that I tend to blend smoothies a lot less. So about two weeks ago, I committed to making juices every other day only and a large part of the reason also, is that I get tired of chopping and cleaning when I make juice.

So anywho, here's a quick green smoothie recipe. This is typically a staple recipe, as I usually buy the same items.

Ingredients:
- 1 handful of Spinach (or another leafy green veggie)
- 1 cup of Greek Yogurt (the one I used was Chobani w/pineapples)
- 1 banana
- 1 cup of diced pineapples
- 1/2 tbs of maca root
- 1/2 large Hass avocado
- 1 tbs of ground chia seeds
- Almond milk and water (I use equal parts and measure in my bullet cup)
- Ice cubes

Quick Juice Recipe

Here is a quick juice recipe to sample, if you ever have any of these items in your fridge!

- 1 numb of ginger
- 1 lemon
- 1/2 tbs of maca root (this is a staple lately; read about the power of MACA!)
- 1 sweet potato
- 2 celery stalks
- 1 cucumber
- 5 strawberries

Juice, pour over ice and enjoy!

Krazy for Kale Recipe

I'm sure you've heard about kale, tried kale, didn't like it, liked it but maybe didn't know how to prepare it. Here's a quick recipe to be less intimidated by it, so you can eat more of it!

Ingredients:
  • Seasonings: garlic powder, garlic salt, crushed red pepper flakes, onion powder, & black pepper
  • Extra Virgin Olive Oil/Olive Oil
  • Chopped kale 
  • 4 chopped Green onions
  • 5 cloves of fresh minced garlic
  • Mushrooms
  • 1 lemon wedge 
  • 1/3 cup water
Directions:

Add a tsp of oil to your chopped kale along with your seasonings & lemon juice. Meanwhile, in a pan, heat up olive oil, add green onions, garlic, mushrooms, seasonings & slightly sautĂ©. Add water & kale. Mix in mushrooms & cover to simmer for about 5 minutes. 

Be sure to not overcook your kale, because it is very tough, but cook until desired texture. I personally like mine tender, like collards.

Vegan & Valentine's Day!! 


Last month I was craving something sweet and a friend, who is vegan, told me to visit Sprinkles and try their vegan red velvet cupcakes. Surely I knew that these vegan cupcakes would not be nearly as good as regular cupcakes, but I began my research and found some pretty good reviews online, so I knew I had to give them a try!

You guys...these cupcakes are amazing and I am officially hooked on them! First of all, red velvet is my  favorite cake flavor and Sprinkles really nailed this recipe! According to their website, "traditional dairy products are substituted with vegan friendly ingredients, including all natural soy milk, tofu-based vegan cream cheese and pure coconut oil."

So ladies and gents, if you're looking for something sweet to get your loved one(s) for V-Day, head on over to a Sprinkles location near you and show them that you love them with something sweetly healthful to eat!
